Roasted Strawberry Shortcakes with Basil Cream

For the Basil Cream

  1. 1 1/2 cups heavy cream
  2. 1 large handful fresh basil leaves, plus more for serving
  3. 3 tablespoons powdered sugar
  4. 1 teaspoon pure vanilla extract
  5. pinch of salt

For the Strawberries

  1. 1 1/2 pound fresh strawberries, hulled and sliced in half
  2. 3 tablespoons granulated sugar
  3. pinch of salt
  4. 2 tablespoons balsamic vinegar

For the Biscuits

  1. 1 1/2 cups all-purpose flour
  2. 2 tablespoons granulated sugar
  3. 1 1/4 teaspoons baking powder
  4. 1/4 teaspoon baking soda
  5. 1/2 teaspoon salt
  6. 6 tablespoons cold unsalted butter, cut into small cubes
  7. 1 large egg yolk, lightly beaten
  8. scant 1/2 cup cold buttermilk, plus more for brushing
